This is going to be a super short recipe post because it’s so straightforward and fast.
These healthy baked chicken tenders can be served as starter, a side or a main dish (maybe with my Garlic Truffle Fries or Perfect Baked Potato 👍).
Set up your breading station; a cup of flour, 2 eggs beaten with a little water and 2 cups of breadcrumbs – I made my own from toasted onion sourdough and added a little parsley and garlic powder but panko is also great for this or any breadcrumb mixture you have. Season the chicken with a little salt and pepper, coat lightly with flour, then the egg wash and finally the breadcrumbs. For extra crispy tenders dip in the egg wash again and then a second coat of breadcrumbs. Lay the breaded chicken pieces on your oiled parchment paper.
Just for fun I made a few bite size pieces and put them on colored toothpicks – the kids love them (and the grownups too…)
Use parchment paper on a baking tray and spray it with PAM oil or wipe it with some olive oil before placing the chicken to stop it from sticking and spray or drizzle a little oil on top of the strips too before baking to help them to get nice and crispy.
You can turn the tenders after about 15 minutes to get a nice even crunch on them but it’s not essential as the oil you put on the tray will mostly deal with that.
There you have it! Healthy chicken tenders, ready in minutes and popular with all. Serve as an appetizer with ketchup, barbecue sauce, ranch, honey mustard or any of your favorite dips. Or as a main dish with fries or rice or even mashed potato 🙂
Also great as a buffet style finger food at your next party.
